Superfood Kelp Salad

 

I modified and photographed this salad for marketing purposes. The goal was to present kelp in a new light, stepping away from traditional Asian applications and into the modern food movement. Our target audience was primarily large food service organizations with an emphasis on cafeterias at progressive colleges. The home scale version of recipe is still promoted on Atlantic Sea Farms website.

SUPERFOOD KELP SALAD

Cabbage, kale, and kelp form a cost-effective anchor to this hearty salad, while garnishes of goji berry and pomegranate add an explosion of color. This is the perfect for a grocery store salad bar or a pot luck because the greens do not easily wilt.

INGREDIENTS

  • 3 bunches Lacinato kale

  • 1 red cabbage

  • 7 carrots, shredded

  • 1 lb Atlantic Sea Farms Ready-Cut Kelp

  • 1 lb shelled edamame

  • 2 cups pomegranate seeds

  • 1 cup goji berries (garnish)

  • 1/2 cup pine nuts (garnish)

  • Olive oil, salt, pepper

DIRECTIONS

Thinly slice kale and cabbage, and mix with all ingredients. Lightly sprinkle olive oil, add salt/pepper, and toss. Garnish with goji berries and pine nuts.
